It tastes like Fanta. How I make compote for the winter
Last year I made a compote for the winter: it tastes like Fanta, only without bubbles and the color is not so bright. A neighbor told me the recipe - she constantly cooks this delicious dish for her grandchildren. Only fruit, water and sugar, no flavors, dyes or chemicals.
We opened the jar in winter and were stunned - it was incredibly delicious.
The recipe couldn't be easier
All you need is:
- a full 0.5 liter jar of fresh apricots;
- half a large orange;
- 1 tbsp. Sahara;
- water.
These are the proportions for a 3-liter jar of compote. You probably think that there is too little fruit. I also doubted it at first. But I tried and realized: no, I don’t need it anymore. The drink has a very pleasant sweet and sour taste of natural fruits, light and refreshing.
To prepare the drink:
- Boil the water.
- Wash the apricots with a brush, break them into halves and remove the pits.
- Cut the orange into thin slices. Do not remove the peel - it gives a characteristic citrus flavor and bright smell.
- Place the fruit in a sterile jar and cover with sugar.
- Fill the jar with boiling water.
- Cover with a sterile lid and seal immediately.
- Wrap the jar in a blanket and leave it overnight. And in the morning you can put the workpiece away in the cellar!
Don't be afraid, the compote will not explode, this is a proven reliable method.
Possible mistakes
I ruined the first batch. I decided that pouring boiling water alone wouldn’t be enough - so I additionally sterilized the compote in a saucepan, 15 minutes per 3-liter jar.
The neighbor said that under no circumstances should this be done. The whole “trick” of the drink is its naturalness. Regular compotes have the taste of boiled fruit. But this is a completely different matter! Homemade Fanta has the taste of fresh apricots and orange, and long-term sterilization completely kills it.
Feature of the drink
Regular compote can be drunk immediately. During cooking, the fruit releases its full flavor into the boiling water, and the drink is ready as soon as you remove the pan from the stove.
But with Fanta everything is different. The drink should sit for 2-3 weeks. The fruits in the jar are not boiled, but only heated. They will need time to impart their aroma and taste to the water.
My experiments
I made 5 jars of regular Fanta and got bored. And in order not to get bored, I started experimenting. I will share with you my most successful finds.
"Fanta citrus"
I added a quarter of a lemon to the usual set of fruits. It turned out sour, fresh and very aromatic.
"Fanta peach"
I replaced the apricots with peaches. It took 5 large peaches for 1 3-liter jar.
I washed the fruits with a brush under the tap - who knows where they were collecting dust at the sellers. Then I cut it into slices, added orange, sugar and ¼ tsp. citric acid. Still, peaches are sweeter than apricots, I was afraid that the drink would be cloying.
“Fanta” turned out awesome - with a bright scent of peach and citrus, light and invigorating.
"Fanta Mojito"
If you can make a drink from apricots, why not from other fruits?
At my dacha, green gooseberries have ripened. I put it on one 3-liter jar:
- 1 tbsp. fresh gooseberries - just trimmed the tails with scissors;
- 1 kiwi, peeled and cut into slices;
- 2 lime slices;
- 3 thin slices of peeled fresh ginger;
- a sprig of mint.
I poured a glass of sugar, poured boiling water over it, sealed it, and kept it under the covers overnight. And in winter we opened the jar and the smell filled the entire kitchen. Fresh berries, citruses and mint are something incredible. And how much vitamin C is there! Not a compote, but a natural cure for viruses.
This year I will make compote for the winter like Fanta - I will definitely make a few jars of homemade mojito.
