Is it possible to freeze boiled beets for the winter in the freezer?

You can freeze boiled beets in the freezer. And this is done quite simply. The product will retain its beneficial properties and original taste.

Fresh beets

Preparing beets for freezing:

  1. It is best to choose medium-sized root vegetables. The tops and tails are not removed before cooking. This way the vegetable will retain maximum nutrients.
  2. During cooking, you need to pour a little vinegar into a pan of water. It will fix the color of the beets and help preserve their flavor.
  3. The skin is removed from the finished vegetable. The pulp is crushed in any convenient way (straws, cubes, large slices or small chips).

Basic freezing methods

There are several methods to freeze beets for the winter. Below we will look at each of them in more detail.

  3. Cut the pulp as convenient.
  4. Spread the vegetable on a tray in an even thin layer and place in the freezer for 1.5-2 hours.
  5. The pieces will be covered with an icy crust and will not stick together.
  6. Place the finished product in sealed bags and be sure to sign.
  7. You can store it this way for several months.

Frozen beets in bags

Method number 2:

  1. Rinse raw beets under running water and place in a deep saucepan.
  2. Boil until fully cooked over low heat. If the water boils too much, the root vegetable will completely lose its color.
  3. Transfer the boiled vegetable to cold water to cool, and then peel.
  4. Next you need to do the same steps as in the first method.

The Mistress's Secret
You can cook the root vegetable without the skin. In this case, it is easier to peel the vegetable; the taste and color will not be affected, but the amount of nutrients will be significantly reduced.

Frozen beets

Method number 3:

  1. Cook the root vegetable as described above.
  2. When it cools down, remove the skin and grind it on a grater.
  3. Place the grated beets in bags or food containers with tight lids. Transfer the container to the freezer.

How to defrost beets correctly?

Containers with vegetables need to be transferred from the freezer to any shelf in the refrigerator. This way the thawing process will take place gradually. To speed up defrosting, the workpiece must be removed from the refrigerator and kept at room temperature.

Beet slicing

If boiled beets are used in first courses or sauces, they do not need to be completely defrosted. When the product is used for salads, it must be thawed, otherwise the salad will “swim” in juice and melt water. You need to take from the freezer the amount of vegetable that will be used. If the workpiece remains, it is not recommended to freeze it again.

Boiled beets are the basis for many dishes. You can use it to prepare delicious salads, original spaghetti, as well as unusual desserts.

This year there is a big beet harvest at the dacha. At first I thought about trying to keep it raw for the winter. But now I’ll boil it anyway, immediately cut it for vinaigrette and rub it into borscht and freeze it. It seems to me that it will be much more convenient. And it definitely won’t go bad.
