Different types of urbech

What is urbech and how is it prepared?

Already in the name “urbech” there are southern notes. Dagestan is considered the birthplace of the product, where it is eaten in almost every family.

The following plant components can be used as raw materials:

  • flax seeds, sesame seeds, pumpkin seeds, poppy seeds, caraway seeds, hemp seeds;
  • nuts – almonds, pine nuts, pecans, pistachios, hazelnuts;
  • coconut;
  • apricot or peach pits;
  • cocoa beans.

The raw materials are placed in stone millstones and crushed. Under high pressure, the plant mass releases oils with which the cake is impregnated. The result is a homogeneous thick paste.

Since the temperature in the millstones does not exceed 40 degrees, the components retain vitamins and microelements, and fats do not oxidize. Oils prevent seeds (nuts) from drying out.

The shelf life of real Urbech is no more than 2 weeks, and after opening the jar – up to 5-6 days in the refrigerator. If upon purchase you see a shelf life of 6 months, it means that either the seeds have been heat-treated, or the manufacturer has added chemical preservatives to the paste.

    I completely agree about the shelf life of natural products, they cannot be long, but there are products with a long shelf life, these are pumpkin oil, mustard oil, black cumin oil, sesame oil, etc., by the way, cedar oil is among them, the oils listed under subject to storage conditions, which is usually from +5 to +10, in a dark place and with a tightly closed lid can be stored for up to 1 year, black cumin oil for more than one year.
    Natural urbech can be stored much longer if the conditions are met, but after opening, the shelf life is indeed reduced by at least two.
    Flaxseed oil can be considered particularly sensitive for up to 1 month, after opening for up to two weeks. But once again I draw attention to the storage conditions; the destructive factor is high temperature (more than 25 degrees Celsius) and contact with air; for some oils, contact with air is a more serious argument for deterioration.
