Freezing lazy dumplings

Preparing dumplings is a lifesaver when you need to quickly feed a child or other family members. Not everyone loves the classic version of the dish with cottage cheese wrapped in dough. Lazy dumplings have obvious advantages: they do not disintegrate when cooked, they are easy, simple and quick to prepare. You can freeze the dish regardless of the recipe you use.

Usually lazy dumplings with cottage cheese are prepared as follows:

  1. Grind the cottage cheese through a sieve (or you can simply break up large lumps with a fork).
  2. Then sugar, egg and flour are added to the curd mass.
  3. Knead the dough with a spoon or your hands, whichever is convenient for you.
  4. Next, the dumplings are cut randomly. You can cut out figures from the dough using molds. You can roll the dough into a sausage and cut into medallions. The main thing is that the workpieces are the same size and thickness. This is necessary so that they are cooked at the same time.

To prepare a 500 g portion you will need the following ingredients: 350 g cottage cheese, 2 tbsp. spoons of sugar, 5 tbsp. spoons of flour, 1 egg.To enrich the taste, you can add cinnamon, grated lemon zest, and vanillin to the dough.

Then the dumplings can be boiled immediately by throwing them into boiling water. Or you can stock up on them for future use by putting them in the freezer.

How to properly freeze lazy dumplings with cottage cheese?

  1. Dip each dumpling in flour. This will prevent the pieces from sticking together during freezing and subsequent cooking.
  2. Place the dumplings in a single layer on a quick-freezing tray. If you don't have a tray, you can use a cutting board or a baking sheet from the oven.
  3. After 2–3 hours, when the pieces have hardened, they should be poured into a bag and stored in the freezer. If possible, squeeze out all the air from the bag.

How and for how long to store?

The shelf life of lazy dumplings depends on the temperature and quality of packaging:

  • According to GOST, semi-finished flour products should be stored at a temperature of -18 degrees, which corresponds to the average freezer compartment of a refrigerator.
  • The second important condition for the safety of the product is sealed packaging.

If these conditions are met, dumplings with cottage cheese can be kept in the freezer for 3 months. If the temperature in the freezer is -12 degrees or the package with semi-finished products is not airtight, you should eat them within 1 month.

It is advisable to immediately divide the preparations into portions so that you do not have to unpack and pack them each time. The number of products in one package may vary depending on the number of family members.

If you're tired of boiling dumplings in water, try steaming them or baking them in the oven. You can also experiment with sauces and toppings. Lazy dumplings with cottage cheese go well with yogurt sauce and strawberry-chocolate topping.

Various semi-finished products allow you to save valuable time and are very helpful when you need to cook something quickly. Unfortunately, the quality of store-bought dumplings often leaves much to be desired, and classic homemade ones are time consuming and troublesome to make. Lazy dumplings with cottage cheese are much easier to prepare, and at the same time they are just as tasty and healthy. The preparations can be frozen in the freezer or boiled immediately. To ensure maximum shelf life, care should be taken to ensure sealed packaging. In this case, the prepared lazy dumplings with cottage cheese can be kept in the freezer and boiled as needed for 3 months.
