A vinaigrette without beets is not a vinaigrette, but a vegetable salad. This is one of the main ingredients that cannot be replaced with anything: neither tomatoes nor red cabbage. Moreover, it contains juicy, soft and sweet beets, which require a lot of time to prepare. I used to do this: I set it to cook for 2-3 hours. But one day, coming home tired from work, I tried a new way of preparing beets for vinaigrette. The dish turned out amazing, and I spent only 15 minutes at most.

What to do if you don’t have time to cook beets for vinaigrette?

In order for the beets to retain their juiciness, sweetness and precious vitamin C, they need to be cooked over low heat. If you turn on high heat, the vegetable will cook 2-3 times faster, but it will turn out tasteless. This option did not suit me. The idea of ​​how to quickly prepare beets for vinaigrette came from Google. So:

  • Option #1. Wash the small vegetable well with a brush. Pierce in several places with a knife straight to the core (make 7-10 punctures). Place in a tight bag. Tie so that there is some free space left. Place in the microwave. Turn on the highest power. Small beets cook in 7 minutes, medium ones in 9 minutes. You can cook potatoes and carrots in the same way (only in separate bags).
  • Option #2. Peel raw beets. Cut into very small cubes, about 0.5 cm.Pour 3 tbsp into the pan. spoons of sunflower oil. Stir in beets. Place on high heat. Pour 50 ml of water and cover with a lid. When a stream of steam starts to come out of the hole, time it for 3 minutes. Turn off the fire. Do not open the lid. The beets will be ready as soon as they cool down!

I liked both methods - in both ways, the beets remain juicy, tasty, and are cooked in a matter of minutes. But my husband doesn’t really approve of using a microwave, so he started using the second option.

The best quick vinaigrette recipe

The idea of ​​quickly cooking beets for a vinaigrette in a frying pan gave me the idea to cook all the other vegetables in the same place. This is how I learned to make a quick vinaigrette - in 20 minutes the salad is on the table.

I am writing a recipe:

  • beets – 1 pc.;
  • carrots – 1 pc.;
  • potatoes – 2 pcs.;
  • onions – 1 pc.;
  • pickled cucumber – 1 pc. (all vegetables are medium, if small, then take more pieces);
  • sauerkraut – 150 g;
  • canned peas - 1 can;
  • canned red beans – 1 can;
  • vegetable oil – 6 tbsp. spoons (of which 3 tablespoons are for dressing);
  • lemon juice – 1 tbsp. spoon;
  • mustard – 1 teaspoon;
  • salt and sugar 0.5 teaspoon each.

Preparation:

Vinaigrette “from scratch” takes a lot of time - that’s what my grandmother and mother told me. I managed to convince them otherwise, although they were skeptical. Like, it won’t be a vinaigrette without long cooking. For the purity of the experiment, I prepared it in two ways. After trying the dish from both salad bowls, my mother and grandmother agreed that they tasted the same. Now I cook it only according to the new recipe. The time savings are obvious. Plus, you don't have to wash dirty pots. Everything is clean, fast and simple!
