  1. A new cast iron frying pan must be thoroughly washed in water and detergent, wiped dry, covered with salt and put on fire.
  2. Heat the dishes over high heat for an hour until the salt darkens. This procedure can be done two or three times. Salt will draw out the fumes and technical oils used in the manufacture of dishes.
  3. Continuing the preparation process, it is recommended to pour half a glass of vegetable oil into the frying pan and heat it until smoke forms. Heat the frying pan together with the oil for 20-30 minutes, then cool the dishes and rinse them with cold water. After this treatment, a thin oil film will form on the frying surface, and the frying pan will be ready for use.

Before choosing a cast iron pancake pan, you need to carefully study the quality of the frying surface. It should be absolutely smooth, without potholes or sagging, with barely noticeable roughness. Over time, such dishes do not lose their properties and only become better.

When starting to bake pancakes in a new cast iron frying pan, you need to prepare for the fact that the first pancakes will be “lumpy”. This is quite normal, and everything will work out the third or fourth time, just remember to add oil before each new pancake.

After completion of work, the pan should be cooled, rinsed in warm water and dried with a paper towel.
