Is it possible to store suluguni in the freezer: how to preserve the appetizing product

Suluguni is a soft cheese that is not recommended to be stored in the freezer. Of course, the product can be frozen, but a block of cheese will be much healthier and tastier if it is fresh.

Why freezing has a bad effect on suluguni

Suluguni is made from goat's or sheep's milk, or less often cow's milk. Brined suluguni cheese contains a lot of water, and when frozen it expands. When removed from the freezer, the product loses a lot of moisture.

Food in the refrigerator

Freezing Suluguni cheese is not recommended for the following reasons:

  • you will no longer feel the subtle nuances of taste, the cheese will look like plastic;
  • it loses its shape - it crumbles;
  • The pleasant color also disappears.

About freezing suluguni

Some housewives have adapted to freezing suluguni with minimal losses to the product:

  1. Transfer a single serving of cheese from the original packaging into a glass or plastic container that can be frozen. The container should be spacious, but not too spacious.
  2. Fill the suluguni with the original brine or table salt solution so that it is completely covered, but so that at least 1 cm remains to the top of the dish. This is necessary so that the container does not burst when the brine freezes and increases in volume.
  3. Place in the freezer.
  4. Defrost strictly in the refrigerator.

Brine for suluguni
1 liter of boiled, cooled water + 400 tablespoons of table salt.

If the refrigerator design allows, use the special “freeze” mode. The faster the product hardens, the less its taste will suffer.

Try to eat the cheese within a month - there is simply no point in storing it longer. It is better to use defrosted soft cheese as part of dishes, for example, for filling in baked goods or salads.

Other cheeses are also soaked in brine: feta, mozzarella, feta cheese.

How to store suluguni without a freezer

The composition of the cheese is balanced: it contains not only proteins, vitamins and minerals, but also beneficial microorganisms. That is why you should treat cheese storage wisely.

At room temperature, suluguni will spoil in a matter of hours. Therefore, place it on the bottom shelf of the refrigerator or in the fruit compartment, always at a constant temperature.

Fresh cheese

The most delicious suluguni cheese is sold in containers with brine. It also has the longest shelf life - about 1 month. During this time, you will definitely have time to enjoy the magnificent salty taste of the product.

Without brine, suluguni lasts only from 2 to 10 days. If the packaging indicates a longer period, be wary: most likely, it contains preservatives.

Measures to help the cheese not spoil:

  1. Ensure that the packaging is sealed.
  2. Replace the open pack with foil, parchment or special cheese paper, or use a container with a lid. And in a plastic bag or film the product will “suffocate”.
  3. If possible, store a block of soft cheese in brine, this will improve its taste.
  4. Periodically replace the storage brine with fresh one. This will prolong its freshness.

Place several portions of refined sugar in a container so that it absorbs the moisture that is released.This trick will extend the shelf life of suluguni by a couple of days.

Buy suluguni in limited quantities, because fresh gourmet cheese is much tastier than defrosted or even just left in the refrigerator.

    I usually store suluguni in the bag in which I buy it. It quickly begins to deteriorate and an unpleasant odor appears. Now I store it either in foil or in a container with a tight lid. It lasts longer.
