I boil eggs so that the shells easily separate on their own - you will also like this method

One day I had to peel two dozen boiled eggs. It would seem that what is so difficult about this? But that time something went wrong - the shell stubbornly did not separate from the protein, as if it had been glued with superglue. After suffering for almost an hour, I decided at all costs to find a way that would allow me to peel eggs with one movement of my hand. And, as it turned out later, there really is such a method, and it consists of two simple steps.

As a child, I was taught to boil eggs like this:

  1. Place them in a saucepan.
  2. Pour in cold water with a little salt.
  3. Place the saucepan on the fire and wait 8 minutes from the moment the water boils.

However, from the point of view of physics, such a cooking process leads to the fact that the protein heats up and thickens very slowly, having time to tightly stick to the shell. Now I do it differently - first I bring the water to a boil and only then lower the eggs into it. Contrary to popular belief, this does not cause them to burst. And in general, only those whose shells were initially damaged become covered with cracks. Tiny chips and cracks are invisible to the eye, and during cooking, when the white and yolk expand, the shell “comes apart at the seams” in these very places.

Some housewives recommend adding soda to the water in addition to salt. I do not share their point of view, because if the shell does burst, the protein will acquire an unpleasant taste and will have to be thrown away.Plus, baking soda doesn't make peeling eggs any easier.

Step 2: Temperature Contrast

Many people have heard that immediately after boiling eggs they need to be placed under cold running water or placed in a container filled with water and ice. But for some reason they ignore this option, considering it ineffective. In reality, it works like this: during cooking, the contents of the egg heat up and expand, pressing tightly against the shell, and when cooled sharply, they shrink, separating from the shell. An air space is formed between the white and the shell, making the egg clean almost instantly.

Please note that there is an exception to this rule: fresh eggs laid 1-2 days ago will not peel well, even if you pour cold water on them immediately after boiling. Therefore, for cooking, I use eggs that are a week or even two weeks old, provided that they were stored in the refrigerator.
