Eggplant for pickles
If you bought or collected a lot of cucumbers, but don’t have time to preserve them, pickle them directly in a plastic jar:
- Wash the cucumbers and fill the bottle with them (be sure to be clean). Fill it almost to the top.
- Add dill umbrellas, blackcurrant leaves, horseradish, garlic cloves and hot pepper.
- Pour in a glass of salt.
- Pour clean water to cover all the cucumbers.
- Cover the neck with gauze or a cloth.
Within 5–6 days, the cucumbers will ferment and foam will drain from the eggplant. You need to take this moment into account and put it on some kind of pallet. After this time, the brine will need to be drained. Rinse the cucumbers with clean water 3 times. Add water again, close the lid and store in the cold.

Stages of work:
- We prepare the material: scissors, a stationery knife, a ruler. We remove labels from the bottles and wash them thoroughly.
- Cut into 4 mm strips. It is important that they are of uniform width.
- We apply the strips one by one to the ruler and make longitudinal slits with a stationery knife (5 mm) in increments of 1.5–2 cm.
